I think we'll be seeing the Soul Stone in Thor: Ragnarok. It is well known that Marvel made Joss Whedon include Thor's extended "bath time" sequence in Avengers: Age of Ultron, and that certainly set up the infinity stones and tied them into Thor. Plus, there was a particular emphasis on Heimdall in the hallucination that the Scarlet Witch gave to Thor in Avengers: Age of Ultron (as opposed to, for instance, Loki, who did agree to film a scene for the movie). The theory is that Heimdall is the possessor of the Soul Stone. He speaks often about being able to see into people's souls. Plus…did you ever look at that odd gem in the center of his chest plate?

Hela probably has the last stone. It makes sense that the Goddess of Death would have the Soul Stone.
