It's cool and kinda weird to see that there 's a direct connection between the Iron Fist Legend and the Phoenix Force. But Aren't the X-Men trying to get to Hope also?

It's actually a dragon. It represents the final challenge Rand had to overcome to earn the right to learn the Iron Fist.
