I honestly don't care if he said "I" instead of "We", to me it's not that big of a deal. I could care less if they made Venom a shade of light-gray.

Oh come on... is it really such a big deal that he doesn't refer to himself as "we"? There's a reasonable answer for why he doesn't: It's not Brock. Eddie refers to himself as "we" because he knows that the symbiote is another organism. Whoever it is refers to himself as "I" in the Venom persona because he doesn't think like Brock does. Did Spidey ever say "we" while in the symbiote suit? No, and it's because only Brock calls Venom "we".

@PatientZero Peter wasn't completely bonded with the Symbiote, so it didn't have complete control over him.
