Thanos is only briefly mentioned in Eternals when Ajak (Salma Hayek) brings up "The Blip," but a character shows up in the mid-credits scene who pretty much ensures that future references to The Mad Titan will be unavoidable.
When Eros, aka Starfox (Harry Styles), makes his grand entrance, he is introduced as the brother of Thanos, and it doesn't sound like that was a throwaway acknowledgement by any means.
A sequel has yet to be greenlit, but if Marvel Studios does decide to revisit these immortal heroes and develop Eros to any significant degree, it sounds like Thanos may also have a part to play - despite being killed off (twice) in Avengers: Endgame.
“I believe that there is no way that you can do Eternals 2 and 3 without somehow touching on Mr. Brolin," co-writer Kaz Firpo tells The Direct.
We assume he means Mr. Thanos, and not the actor that plays him!
While this is far from confirmation that Thanos will actually appear in future films, it does sound like the character is going to be revisited in some capacity down the line. Flashbacks are a possibility, but with the Multiverse set to become a major component of the MCU, Marvel Studios might decide to properly reintroduce the all-powerful villain at some point.
